Okay, so I’m going to a friend’s house for dinner tomorrow night…. I wanted to make something that I can eat and enjoy without sacrificing too many points. I found a Weight Watchers recipe for American Potato Salad that uses Greek YOGURT (??) in place of some of the mayo…I was curious about this. First of all, I’ve heard great things about the creaminess and high protein content of greek yogurt. But I was torn: I don’t really like plain yogurt. So, on my grocery trip, I discovered that they make little sectioned greek yogurt with strawberry, blueberry and cherry. I am SO excited to try them!! I did not buy any tonight, as I wanted to see what the plain yogurt was like that my recipe (below) called for. I had NO idea what to expect when I opened the package…but I was surprised by the almost sour cream texture. It was REALLY creamy!! AND the potato salad ROCKS!! I don’t even miss the mayo! I cannot wait to try one of the little combo packs!! It’s already been added to my grocery list for this weekend!!

I love greek yogurt! I too hate yogurt normally- the only kind I eat is Yoplait’s Thick and Creamy light Strawberry.
But I use greek yogurt in everything. Especially in hummus! It makes a delicious hummus. You can also mix it with spices to make a sauce for chicken, beef or lamb. Dry chicken gets pretty boring, right?
