I have a penchant for not planning ahead. It’s hard to make everything work between school, hubby, work and exercise. So I always try to have a few things in the freezer that I can grab for mornings that would otherwise leave me lunch-less. This morning I reached in and grabbed one of the new Healthy Choice All Natural Entrees: Pumpkin Squash Ravioli. Hmmmm…I will admit that I was a bit skeptical, but I was late and needed to have SOMETHING, ANYTHING to eat today. This meal is vegetarian, but not vegan, which is okay with me. I’m not to that point yet. Obviously I ate it, or I wouldn’t be blogging about it. It wasn’t bad…I actually may have this again. *gasp* I enjoyed butternut squash! EEK! What is WRONG with the world!! I know that I should be packing my lunches, not buying them in the freezer section, but in a pinch, it works. I would actually have liked more asparugus, but that’s a personal preference. All in all, I’m full, my tummy is happy, and I didn’t need meat to do it! WOOHOO! I feel SO much better about being able to find GOOD vegetarian food in a pinch!
Okay, so here’s the skinny: the ravioli were firm, and the filling was DELISH! I really liked the use of apples with the squash and asparagus. Overall, I got full for 300 calories, and I kinda felt like I was cheating and having dessert because of the flavor combinations. I also liked that the sauce wasn’t overpowering…it complimented the pumpkin very well. Overall, this one’s a keeper!
