Veg-ing out

GardenburgerOkay…so I had a bit of a freak-out today. My boss wanted to go (wait for it)…OUT TO LUNCH! Um…okay. But what can I eat?! Since I’ve switched my diet to the vegetarian persuasion…. I know, I know. There’s always salad with oil and vinegar. But that’s so BORING! I eat LOTS of salad. I knew that there was always that fail-safe…but I want to be able to branch out a little in my food choices. I was thrilled to discover a GARDENBURGER on the menu! WOOHOO! It came with fries, but I couldn’t stand the thought of all that grease, so I ordered a salad instead, no cheese, no croutons (that’s a whole ‘nother story…they’re just plain weird!) with oil and vinegar. I detest oil on salad…I just really don’t like the texture, so I put my balsamic vinegar on and chowed down! It was SO yummy!! I asked for my burger dry, so that I could control the toppings. I added some yellow mustard and it was delish! I would have preferred a wheat bun, but overall, I’m happy with my choices. I think that it’s important for me to realize that I can still eat healthy and have some fun, too. Eating out is a luxury for me, so it doesn’t happen very often, and I really wanted to have something special. I did! AND I ate healthy (less than 500 calories, all told!). It felt great to be the one who was full but not uncomfortable as my coworkers bemoaned their pants on the way back to the office. Mission ACCOMPLISHED!!
