EAT THIS: Beki’s Homemade Veggie Burgers

I recieved this recipe compliments of my friend Beki. And O.M.W. do they ROCK!! I served them with some oven-baked red potato wedges and steamed asparagus. I used my Orka Gourmet 27-Ounce Round Steamer, Black to steam it, and hubby was fascinated!We ended up steaming some edamame for some late night munchies…and now he’s looking for more food to steam. It’s pretty sweet, actually. He absolutely LOVED that it only took 4 minutes for PERFECT asparagus, and 3 minutes for the edamame. Pretty nifty, if you ask me. I would have included a picture of dinner, but we were ravenous and I didn’t even think about the camera until I had polished off the food. OOPS! I will DEFINITELY be making this again, and I’ll post pictures then. In the meantime, try this recipe. It modifies well (the original called for tofu and cream cheese…since I don’t eat cream cheese, I just substituted some Ener G Foods – Egg Replacer – 1(16 Oz.) instead. They turned out great!! Without further ado, here’s Beki’s recipe (with my modifications):

Beki’s Homemade Veggie Burgers

Ingredients:

1 c dry oats
1 c cooked brown rice
1/2 c dry lentils, soaked and cooked
1/2 c dry black beans, soaked and cooked
1/2 c dry black-eyed peas, soaked and cooked
1/2 c. salsa
1/2 c chopped onions
1/2  green pepper, chopped
1/2 c chopped mushrooms
equivalent of 1 egg (I used egg replacer)
cooking spray

Method:

1.  Mix all ingredients together and shape into patties.

2.  Brown on both sides in a skillet coated with cooking spray.
