Okay, I’m sure that I’m not the first person to figure this out, but right now I’m pretty impressed with myself. After having a WONDERFUL dinner of vegan sushi, hubby and I were wanting something a little sweet. So…I made some vegan elephant ears (I know, I know…but I couldn’t think of a better name). THEY WERE DELICIOUS! So delicious in fact, that I felt compelled to share them with the world! I realize that this is a rather short blog, but I am SO excited (and sugar loaded) that I can’t pay anymore attention…so here it is:
Brea’s Elephant Ear(s)
*makes one serving*
1 tortilla
tsp. Earth Balance
sugar & cinnamon
Pop your tortilla into the oven (or toaster oven) at 350 degrees for about 3-5 minutes. WATCH IT CLOSELY. It will puff up. Once it puffs, take it out, spread the Earth Balance on it, and pop it back in for about 30-45 seconds. Pull it out, and sprinkle the sugar & cinnamon over the top. (It’s SO good with some soy whipped topping, too!!)
