Tempeh reubens ROCK

If you can’t tell, I’m IN LOVE with this cookbook. Today, we made the reubens, and THEY WERE AWESOME!! Even my omni hubby was giving RAVE reviews. I actually started making these last night, and hubby thought that the marinade was taking too long…(it’s supposed to marinate for an hour). So, we went out for sushi instead. I actually got a little bit adventurous, ordering an asparagus handroll, cucumber roll, avocado roll, vegetable roll…. I was IN HEAVEN!! Okay, so back to the reubens. (have I mentioned how much they ROCK?!) After letting the tempeh marinate for almost 24 hours, it was time to get to work. I must confess that I’ve never actually had a reuben before today…probably because I have always been scared of sauerkraut…NOT ANYMORE!! And my omni hubby has always LOVED reubens. I was actually pretty nervous about making these for him, since he’s had “real” reubens in his life. He was SHOCKED at how delicous these sammies were!! If you haevn’t tried them, you MUST! (the fact that they’re omni-approved should be a HUGE indicator of how amazing they are!) I served the super-sammies with some sweet potato fries. SO GOOD.
