Dinner is always an adventure for me…I like to cook, and when I get home, it calms me down. So, when I asked hubs if we could have breakfast for dinner, he didn’t object. Then he asked me what we were having. I suggested omlettes, which would be an adventure for us. He agreed and we started to discuss fillings. I wanted mushrooms, onions, bell pepper and zucchini. He wanted sausage, mushrooms and onions. I figured I would just cook the fillings seperately. I dutifully printed out the recipe and stopped by the store on the way home. 1 block of silken tofu and a carton of soymilk later (we had run out making smoothies this morning) I was armed and ready to make my very first vegan omlette. Then hubby said, can’t we just scramble it? Hm. I already had the veggies cooking, so I grabbed my favorite cookbook: Vegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That Rock (if you haven’t bought it yet, DO IT NOW!!) and checked the index. YES!! A Tofu Scramble recipe! I was in business! I obviously had more veggies that the recipe called for, so I just increased my seasonings a bit, grabbed my block of extra-firm tofu and got to crumbling. In the meantime, I browned our sausage patties and got plates. Hubs devoured his, and said that the only change he would make would be to add more spice. IT’S A HIT!!
