So…my mother in law (MIL) is here visiting, and I’m planning vegan dinner dishes for the next 3 days! I am SO excited… Hopefully she’ll like everything! Last night, I made Vegan Enchilada Bake, mixed green salad and broccoli as sides (steamed in my awesome steamer!!) Tonight, I’m going to make Tempeh Reubens with spicy slaw and sweet potato fries. I think that we may do breakfast for dinner on Wednesday, which would involve tofu scramble, hashbrowns (a mix of sweet and russet potatoes) and smoothies…
After our first vegan meal:
So far so good! Mom loved the enchiladas and couldn’t tell that there wasn’t meat in them…Ish had to tell her before she was done eating, I was going to wait until we were done, but she knew AND she kept eating (which is a good sign!). She seemed a little skeptical of the reubens…especially once she found out they were going to be vegan. I explained that I used tempeh instead of pastrami, and then she (inevitably) asked what tempeh is. Ummm…I explained it as nicely as I could (what with it being fermented soybeans and all). She didn’t seem terrified (I hope).

Yay! That is so fantastic that you get to introduce them to delicious vegan food! I always love how surprised people are that you can’t tell that recipes do not include animal products.
