I decided to make a new dish for dinner tonight. The Vegan Tree House has a great recipe for creamy cashew pasta with sundried tomatoes! (you can see it here) The only thing that I did differently was to add a can of black olives directly to the pot before serving. I adore olives, and am always looking for another way to use them in a recipe. The saltiness really complimented the sauce. SO delish! Even Ish liked it! He actually said that I could make it again and he wouldn’t mind. That’s HUGE! I love finding great vegan recipes that Ish likes. Having omni approval is ALWAYS a good thing!
When I went back to check for more recipes, I was sad to see that Vegan Treehouse is going to be taking a break from blogging. Her creativity and inspiration will be missed…but there’s rumors of a book in the works?! How awesome would that be!

Sounds like a wonderful recipe. I think the nutiness of the cashews and the sweetness of the sun dried tomatoes are an awesome combination.
