Normally, I make my lunch and bring it to work, but since Ish and I are going to be leaving for our ROAD TRIP (can you tell I’m excited?!) tomorrow night, I didn’t do a ton of grocery shopping this weekend. I bought just what I was absolutely sure we would eat. So, as I was making lunch this morning, I was hesitant to make my “tuna” salad, since we’ll be leaving tomorrow, and I really didn’t want to waste 1/2 a block of tofu, either. Then I remembered that I’d purchased a few frozen meals! Hooray for thinking ahead! So, for lunch today I had Amy’s Indian Vegetable Korma. Super delicious mis of curried vegetables, rice and dal. AWESOME! I love Indian food, and this was no exception. The veggies were perfectly cooked, the dal was divine and the rice was just the right addition to the textures. I will admit that I tasted everything separately, but then mixed it all together. Much better. I normally don’t like mixing my food, this turned out to be a good instinct. Each flavor was perfect. Just sweet enough, and VERY filling! I will definitely be purchasing this again (probably in multiples!). AND at only 300 calories, it’s perfect for lunch. …did I mention that it’s VEGAN?
