When our omni friends invited Ish and I over for brisket, you can imagine how excited I was. I immediately started thinking of good vegan options that I could bring to share with everyone. As you can see, I decided on veggie-kabobs, seitan ribz and some awesome french bread. I think that the recipe for the ribz turned out amazingly well. AND they were SUPER easy! I will say that I subbed some bbq sauce for the liquid smoke (didn’t have any on hand…and if I remember correctly, I am not the biggest fan), and they smelled AWESOME cooking! In fact, Ish requested that I make the ribz again! The veggie skewers were super easy…I just chopped up some bell peppers, yellow squash, eggplant and cremini mushrooms, stuck them on wooden skewers and added them to the bbq when I put on the ribz. Even the omnis enjoyed the vegan food…just be careful how long you cook the ribz once you apply the bbq sauce…they tend to burn a little (oops!). I think that this is one recipe that will just get better as I continue to make it. As another great alternative, these ribz can be made in the oven if it’s too cold (or if, like me, you don’t have a bbq at your house). All in all, the vegan bbq was a super successful venture! (did I mention the deliciousness??)
