Soba noodle stir fry

WOW. I made the MOST AMAZING stir fry tonight, and I absolutely MUST share it with y’all. Have you ever heard of soba noodles? They’re the brown noodles that you always see in stir fries and cold noodle salads…the brown color comes from the buckwheat, which also gives them a unique (and delicious) flavor. So, without further ado, here’s my recipe:

Soba Noodle Stir Fry
(Makes 4 servings)

Ingredients:
1 bundle of soba noodles (most packages come with 3)
small zucchini, sliced
1/2 c shredded carrots
1-2 c crimini mushrooms
1/2 c edamame
1 c broccoli florets
small bell pepper (your preference), sliced into sticks
2 tbsp minced garlic
1 tbsp sesame seeds
1 tsp red pepper flakes
2 tbsp coconut oil
1/4 c teriyaki sauce (I like Soy Vay)
splash lime juice

Method:

Bring a pan of water to a boil, drop in soba noodles and cook for 5 minutes. While the noodles cook, heat a skillet or wok on high heat, and add your veggies. Stir fry the veggies for 3-5 minutes, until they’ve brightened in color, but aren’t soft. Add the drained soba noodles, and remainder of the ingredients. Stir fry everything in the pan for 1-2 minutes, until incorporated. Serve!
