Tomorrow I’m making a point of eating 99.9% raw (my vinegrette isn’t completely raw, and I’m okay with that), and I am SO very excited about it!! I am quite literally bouncing around my kitchen getting lots of fresh fruits and veggies cut up in anticipation of my adventure tomorrow. I have been making a point to eat 90% raw, and I’ve been very happy with the way that I feel, but I think that I can do better. So I’m going to try it for a day and see how it goes!! Breakfast will be
a green smoothie, complete with fresh strawberries, apricots, greens (obviously), banana and an orange. Then for a mid-morning snack I’ll enjoy a gingersnap Larabar. I’ll have hummus with LOTS of fresh veggies (including broccoli, cauliflower, green bell peppers, radishes & carrots). I’ll enjoy a nectarine for dessert! YUM! AND THEN…for my afternoon snack, I’ll enjoy a green pluot with some red grapes. Top all of that fresh veggie and fruity goodness with a huge green salad topped with some cherry tomatoes, cucumbers, almonds and raspberries and I’ll be a happy (and very full!) camper! I realize that it might sound a bit odd to plan my entire day the night before, but I absolutely love this time of year…with all the seasonal fruits and veggies. I just can’t let all of that goodness go to waste!! So, I’m going to REALLY enjoy all the wonderful flavors. Hopefully I’ll be able to continue my raw food kick for at least the next week…I need to start researching some good raw food recipes. Any suggestions out there? I remember hearing about raw nachos once…I’ll have to see if I can find the recipe!
