Happy holidays and Merry Christmas, everyone!
I’ve been in full-fledged holiday prep mode today. I’ve got my cranberry-orange sauce made, sourdough croutons in the oven, and I even made dessert (that is if it lasts until Saturday!). I’m a huge fan of the Fat Free Vegan Kitchen. She’s got some awesome recipes, and they’re GOOD for you! I received a vegan cheesecake recipe from a good friend, and then was perusing the internet for some ideas to make it ‘unique’…and found this double layer pumpkin cheesecake. It’s absolutely the most amazing dessert I’ve ever had. Even Ish said it topped his dessert expectations-which include a favorite non-vegan pumpkin creme brulee. It was super easy, and my house now smells appropriately Christmas-y. On another train of thought… I have to admit that my 30-days of barre workouts has suffered the last three days. I came down with a horribly sore throat (and because I’m nursing, I can’t take anything), and have been trying to get as much rest as I possibly can, providing that Tater cooperates. I’m hoping to be able to get back to exercising as soon as I can breathe without coughing uncontrollably. I am happy to report that I’ve lost a few pounds, and hope that as soon as I’m better I’ll be back at it and hopefully take quite a few more pounds off (permanently!).
Now all I have to do on Christmas is make my roast, the potatoes, stuffing, and carrots! Not too much work to for just the three of us.
