Oh.My.Word. You know those days that get away from you? Well it feels like I’ve been having weeks like that. For months. And it’s not for lack of trying to get organized. Oh no it is not. I’ve been on top of dinners, thanks to FreezEasy.
I’ve been making 10 freezer meals a weekend, and have enough meals to get us through the end of next month. Yes, I’m a little proud of myself. But seriously, y’all. Taking an hour out of our weekend to have dinner for 10 nights? That’s totally worth it in my opinion. And the guys are loving dinners. Sure, I still make some things from scratch…like my chocolate coconut mousse (don’t worry-we’re getting there).
My point was that because I’m spending less time worrying about dinner, I have more time to do other things. Like create delicious desserts when I’m having a rough day. Just me? Okay fine. You can make dessert whenever it suits you. For me, I prefer to make it when I’ve had a day from, well, you know where. One of those days that just doesn’t seem to end.
So last night, I decided I would “indulge” a little. Okay, okay. A lot. I wanted chocolate, and lots of it-but I didn’t want to totally implode all the hard work I’d done over the last few months. Even though the scale wasn’t quite where I wanted it to be, that’s not an excuse for me to just throw caution to the wind…right? So instead of driving the 2 minutes to Sonic (no I’m not exaggerating-God has a terrific sense of humor), I took a chance on some ingredients that I found in my pantry: coconut cream, cacao powder, and stevia.
3 Ingredient Chocolate Mousse
1 can heavy coconut cream (I love the Trader Joe’s brand)
1.5-2 tablespoons organic cacao powder
1/4 teaspoon organic stevia (I use this brand, which doesn’t seem to have that funny tinny taste), or to taste
Start by chilling your coconut cream in the refrigerator for at least 3 hours. Use a scraping spatula to transfer your chilled coconut cream into a mixing bowl. Make a small “bowl” in the cream and add your cacao and stevia. cover.
Then, using a hand mixer with the whisk attachment (NOT the beaters), slowly start to combine your ingredients. Gradually increase the speed of your mixer until the mousse becomes light and fluffy-and all the ingredients are fully incorporated.
Spoon the mixture into small ramekins (I have these) and serve. Or just eat it straight out of the bowl like I did. I won’t judge.
