Please tell me that I’m not the only one who gets overwhelmed at dinnertime? Everyone is hungry, I’m cranky, and usually, I still have work to do (because when you’re working from home lots of things “come up”).
Where am I going with this? Well, Ish bought me a freezer for Christmas (so romantic, right?!), and I’ve been slowly filling it with freezer meals. This has resulted in a much calmer pre-dinner mood for everyone, and a much more productive day for me (try worrying about dinner while you’re working. It’s not fun).
Plus, Costco opened up down the street not too long ago so I can get bulk chicken and steak (and bacon)…among other things (like coconut oil, paleo pancake mix, and salsa by the gallon).
But I digress.
Ever since I embarked on my Whole30 last month, I’ve been hyper-aware of how utterly awful we were eating. Thankfully, we’ve made some improvements to our diet and even the kids are getting on board (for the most part).

When you’re eating clean, I think that there’s a misconception around meal prep and clean eating…but there shouldn’t be. I like to use a mix of fresh but prepped (think chopping veggies ahead of time, using freeze-dried options for things like onions, carrots, and celery, and pre-filling steamable bags) and full on freezer meals.
I think that’s because I love to cook, but there are nights that I honestly just don’t have time. But planning ahead gives me time (YAY!).
