2-Ingredient Breakfast Ice Cream {Quest Nutrition}

I miss cereal. And before you tell me that I still have plenty of gluten free options, just stop. I mean that I miss the sugary, bad-for-you stuff that my mom was smart enough to keep out of the house (even it the eighties). I miss Count Chocula, and Cinnamon Toast Crunch, and Apple Jacks. But I know they aren’t healthy. So when I was picking up some supplements at GNC over the weekend I may have freaked out a little bit when I saw Quest Cinnamon Crunch Protein Powder.

I’m going to say that again: Cinamon.Crunch. I obviously did what any respectable adult would do and I squealed and jumped up and down. Then a took a picture and sent it to Ish.

And then I promptly bought everything they had on the shelf. Don’t judge me. It’s been so long since I’ve had something that was anywhere near sugary cereal.

And y’all. This protein powder has it all. It’s sweet, cinnamony, and downright delicious. Plus, it has 20 grams of protein per serving. Per.Serving!

Considering that my body does best when I consume at least 45 grams of protein each day, this is a huge (and delicious) help.

Now, I love protein shakes. They’re not only delicious, they’re also a great option for those of us who (gasp) forget to eat a meal. Or two.

I’m busy, and most days, I’m lucky if I remember to put my glasses on my face before realizing that the screen is a little blurry.

I’m like that with breakfast, too. I forget. I’m not proud of it, but it happens. Thankfully, I have protein shakes that rescue me nearly every morning. Except when I get tired of them.

Some days, I want to start my day with ice cream, darn it!

And you know what, I’m a grown adult, and no one is going to stop me.

2 Ingredient Breakfast Ice Cream

  • 1 packet Quest Nutrition Cinnamon Crunch
  • 1 can organic full fat coconut milk

Dump it all in your blender (I recommend that you use a Vitamix so that it gets super creamy), then freeze for at least 2 hours. I recommend making this the night before you want to eat it.

I even made y’all a totally embarrassing video to show you how easy this is:

See? Super easy. Even the boys can’t get enough of this recipe. It’s delicious. And it tastes just like the milk used to after I finished my cereal. Or a churro. Either way, this is a new staple in my house.

Have you ever made breakfast ice cream?
