7 Days of My Whole30: Week 2

I’m still a little shell shocked that I FINISHED my second week. I’m halfway to 30 days, y’all! That’s huge! And the food just keeps getting better and better. I haven’t been this excited about food in a long time…and at the same time, I don’t feel like I need to eat. It’s an odd place to be!

Yea, I get hungry, but I have found that I don’t need to mindlessly munch. For me, that’s a big freakin’ deal. I also figured out that I have a cashew addiction. So, I am putting them off my menu until I’m done with my Whole30. Self-control. Learning what works for me.

Want to know what I ate?

Whole30 Day 8

Breakfast: Southern omelette muffins with fresh berries

Lunch: Against All Grain mini-meatloaf muffins and steamed green beans

Dinner: Against All Grain mini-meatloaf muffins and steamed broccoli

I feel amazing today! Got in a good Tracy Anderson Method workout (review coming soon!), cleaned the house, and got a lot of fun things done (and some homeschool stuff) with the kids. It was a good day!

Whole30 Day 9

Breakfast: Southern omelette muffins with fresh berries

Lunch: The Whole30 sweet potato and chicken hash

Dinner: Against All Grain BLTA with sautéed brussels sprouts

I had another good day. I actually made it all the way through Dance Cardio without feeling like I was going to throw up, which is a pretty big deal, y’all! After The Baby was born, jumping has made me nauseaus-which is weird-, and today, nada! I am over.the.moon.

Whole30 Day 10

Breakfast: 1 hardboiled egg. I know, I know.

Lunch: The Whole30 sweet potato and chicken hash

Dinner: Eggs in Purgatory from Nom Nom Paleo

Y’all, I felt awesome today. I prepped some extra lunches for the boys and myself, and have tons of energy! I wish I could share. If you’ve been on the fence about doing the Whole30, take the plunge. If you can get through the first week, it just keeps getting better!

Whole30 Day 11

Breakfast: Egg cupcakes with asparagus and bacon. Mixed berries

Lunch: Spicy tuna cakes from Nom Nom Paleo, hard boiled egg, bell pepper slices, and a pluot

Dinner: Leftover eggs in Purgatory from Nom Nom Paleo

Today was rough. I have been able to resist temptation, but Smalls had his monthly clinic visit to assess his complete blood count and go over his bone marrow biopsy from last month. It was a long day. We left the house at 9:00 a.m., drove up to Texas Children’s, and then waited for his doctor, who was running late.

Thankfully, they were doing a “camp in” for all the kids who can’t attend their summer camp, so there was plenty for him to do. But that also meant Chik Fil-A (breakfast AND lunch!), popcorn, cotton candy, and ice cream. I did say no to all but bottles of water. And I really enjoyed my lunch, but I am craving junk.

I think this is my body’s way of reminding me that I still have a long way to go. It does not help that I didn’t pack enough water (we didn’t leave until nearly 4:00 p.m. because he had to get his Pentamidine treatment to stave off pneumonia as well), and I had two very, very tired kids.

I didn’t munch…but I want to.

Whole30 Day 12

Breakfast: Leftover eggs in Purgatory from Nom Nom Paleo with cantaloupe and blueberries

Lunch: Egg cupcakes with asparagus and bacon with cantaloupe and blueberries

Dinner: The Whole30 sweet potato and chicken hash

Today was rough-I was tired, The Baby was up all night long, and so was I, but I stuck with it and gained more energy as the day went on. I even had enough energy to initiate a water balloon fight with hubby when he got home. The boys and I had a blast getting soaked!

Whole30 Day 13

Breakfast: Scrambled eggs with mushrooms and onions. Blackberries, raspberries, and pomegranate seeds

Lunch: Spicy tuna cakes from Nom Nom Paleo with steamed broccoli

Dinner: The Whole30 sweet potato and chicken hash

Another day of sugar cravings. It’s frustrating! I felt awesome last weekend and this weekend I am feeling like I want to eat, yet I’m not hungry. I also finished my dinner when I should have stopped halfway through…it’s a terribly bad habit that I need to work to break. I know that I’m not even halfway there, and the food is delicious, but it’s habit.

On a positive note, I’ve worked out every day so far this week and feel fantastic!

Whole30 Day 14

Breakfast: Spicy tuna cakes from Nom Nom Paleo

Lunch: Egg salad in butter lettuce cups with mixed berries and pomegranate seeds

Dinner: Roast bison with oven “fries” and steamed broccoli

Today was so much better as far as cravings go! I took the boys and did my shopping for this week (we’re supposed to get hit with a Tropical Storm, so I wanted to be sure we don’t need to go out), then came home and prepped. I’m really enjoying my meal prep time, mostly because Smalls can help, and it saves me so much time during the week!
