I’m not gonna lie. I really dislike (hate seems like too strong a word…kind of….) beets. I mean, they taste like dirt. But beets are actually good for you…which means you probably need to at least try to eat beets…some of the time.
Now, you probably know that you can roast them, steam them, and boil them…but did you also know that they’re really, really tasty when you add them to a salad? I know. It sounds like I’ve lost my ever-loving mind. But seriously, folks.
Here’s a tip: Beets (earthy) + jicama (sweet) = heaven. Seems random. I get it. But you have to try these two together. You will always have beets and jicama on your salads if you do. Even the boys love the combination…just don’t be like me and tell your kids they’re beets. Make something up or you’ll get that face right there. That’s what your almost 6 year old looks like when you say “I knew you would like beets and jicama!”.
Now, I don’t generally prepare beets at home. They’re messy…and they smell kind of like feet. But I know they’re healthy, and I also know that I really do need to eat them. But I digress. Just because I’m not a huge fan of preparing beets myself doesn’t mean I shouldn’t try to incorporate them into my diet!

So. Now that we know beets are good for us…we just have to get past preparing them. As I mentioned, I’m not a huge fan of doing that myself. But, I love that there are places like Salata that allow me to add beets to my salad (I always ask for a double portion and I’m sure that their awesome staff think I’m completely nuts).
Stop Eating Dirt
I’m a huge fan of disguising the “dirt” taste, and a salad is the perfect platform. So yesterday, when I ate at Salata, I made a killer salad…and I couldn’t even taste the beets! Here’s what I added to my bowl:
- Mixed greens
- Spinach
- Mushrooms
- Beets (x2)
- Jicama
- Hard boiled eggs
- Feta
- Ginger Lime Vinaigrette
- Marinated chicken
- Avocado
- Bacon (duh.)
That’s it! And it was insanely delicious. I have had so many people give me side eye when I add beets to my salad, but you know what? They are so, so good for you! Get over it, and try it in your next salad. Trust me on this. You won’t even know they’re there!
