Winter has been fairly mild this year as far as snow goes (which is a bummer since there’s not even enough to go sledding)…but it’s still cold.
And it’s January, which means that we have (once again) decided to go back to eating a healthier, less processed diet. Still gluten-free, largely dairy free (most of the time)…and food that the kids will not complain about eating.
…oh. And meals have to be quick, because between swimming, working, school, and hubby’s schedule dinner needs to be able to be on the table in less than an hour most nights. That is where the Instant Pot rolls in.

Easy Bruschetta Chicken
One of my all-time favorites has always been Bruschetta Chicken, but it takes forever on the stove. Which means we don’t have it all that often, though we could. Bruschetta Chicken (or Pizza Chicken as I call it for the kids) is super easy, super packed with flavor, and it reminds me of family meals at my great grandmother’s house.
Plus, it’s a fool-proof winter dish. It’s warming, delicious, and very rarely do I make it and have leftovers.
But again, it takes forever. Or it did…
Over the break, hubby asked me if I could make Bruschetta Chicken, but I didn’t want to spend the time in the kitchen when I could be playing board games with the kids.
So I tried modifying the recipe for the Instant Pot…and it turned out the way, way better than I expected. Even Ish said that he preferred this method over my usual stovetop and oven go-to.
Since this was such a huge success (and the kids had seconds of “pizza chicken”), I’m making it again tonight…and I’m sharing the recipe (because you have GOT to try this!).
What Should I Serve With Bruschetta Chicken
I reach for a lighter version like cauliflower rice, but you can use regular rice or do pasta. Serve with a side salad and call it a dinner fit for a queen.

How to Make Bruschetta Chicken
Ingredients For Bruschetta Chicken
- 11/2 lbs of skinless boneless Chicken breasts
- 2 garlic cloves, minced
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 14.5 oz can of diced tomatoes
- 1 tsp Worcestershire Sauce
- 1/3 Cup Sherry
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 teaspoon Italian Seasoning
- Cauliflower Rice (or regular)

Bruschetta Chicken
Ingredients
- 11/2 lbs of skinless boneless Chicken breasts

- 2 tablespoons olive oil
- 1 14.5 oz can of diced tomatoes
- 1 tsp Worcestershire Sauce
- 1/3 Cup Sherry

- 1/2 tsp Pepper
- 2 tsp Italian Seasoning
- Hot Cauliflower Rice or regular
Instructions
- Combine the diced tomatoes, sherry, Worcestershire Sauce, balsamic vinegar, Italian Seasoning, salt and pepper into a bowl.
- Select Saute and add the olive oil to the pot. Brown chicken in batches on both sides.
- Remove chicken from pot and then add garlic to the pot. Cook, stirring until soft, about 2-3 minutes.
- Return the chicken to the pot
- Pour the Vinegar mixture over the chicken.
- Cook at High Pressure for 8 minutes. When cooking is complete, use a natural release to depressurize.
