For the most part, I try really hard to practice moderation and eat healthily. But sometimes…a girls got to give a little and try a giant stack of cornbread pancakes. Am I right or am I right?

What I love most about these chorizo pancakes is that they’re crazy simple to make. I love knowing that I’m getting a great taste with minimal effort when making these!

All you really need are a few simple ingredients to get started!

Ingredients needed for homemade chorizo pancakes

  • 1 package of cornbread mix
  • 1 tube of chorizo meat
  • cilantro
  • chives
  • 1 egg
  • sour cream
  • 1 can of diced tomatoes
  • toppings (sour cream, cheese, jalapenos, etc.)

How to make chorizo pancakes

Begin by cooking up the chorizo meat in a skillet or the stove. You’ll want to chop it up finely and make certain that it’s cooked all the way through. Once cooked, drain if there is any excess grease and set aside.

Mix together the cornbread mix as stated by the directions on the package. (You’re using this to make your pancakes so if it’s too thick, add in a tad bit more water to help it be a bit thinner.)

cornbread pancakes recipeOnce you have the cornbread mixed, add to your griddle or hot pan in small pancake sized circles. Before you flip over to the other side, sprinkle on some of your cooked chorizo meat. Then flip.

Cook your pancakes until they are done then pull them off the hot stove. Before you start stacking them, add in some of your fun ingredients and toppings between the layers. Spread out sour cream, add in some diced tomatoes or sprinkle with cheese. Make certain that you stack them as you go to create a giant cornbread pancake!

Once the egg is done, place it on top of the pancake.

Top with chives and cilantro and enjoy!
