Dalgona Ice Cream Recipe

If you don’t already know what it is, Dalgona coffee is a type of whipped coffee topping that originated in South Korea during the COVID-19 lockdowns there. It blew up on social media platforms like Tik-Tok where it earned the nickname “quarantine” coffee for obvious reasons. 

The fact that it’s ridiculously easy to make, doesn’t use a lot of ingredients, and tastes great helped it become an almost overnight worldwide phenomenon. So, if you’re bored at home, pull out your mixer and whip up this delicious dessert recipe right now! 

Is Dalgona coffee a drink?

Yes and no. To make regular Dalgona coffee you make this whipped mixture and then add it to a cup of milk with ice. It makes the best cappuccino topping, too! You can even make it into a delicious boozy creation or even a delicious salted caramel creation. There’s so many options! 

But, since it became popular, the whipped topping for Dalgona coffee has kind of become the ‘thing’ people make, adapting it to other recipes to make Dalgona coffee themed drinks and treats. 

The Dalgona coffee that we’re making for this recipe is just the whipped portion, which you can serve over ice cream or any dessert of your choice. 

Is Dalgona coffee good on everything?

The short answer is yes. Long answer? Definitely! OK but really, with its simple flavour profile Dalgona coffee makes a perfect addition to all kinds of milky drinks and foods. It’s basically made up of instant coffee, water, and sugar so you get this rich and slightly sweet flavour that pairs well with a variety of different foods.

If you have a sweet tooth, you might find Dalgona coffee to be a bit too bitter for your taste. That’s why it’s a great topping to sweet treats, like ice cream. The best part? You probably already have all the ingredients to make this recipe at home!

Is Dalgona coffee hot or cold?

You use hot water to make up your Dalgona coffee, but it’s not necessarily a hot recipe. You just need to use hot water to help it whip up properly so you get that light, familiar texture that looks so delicious. What’s great about quarantine coffee is you can serve it in warm or cold combinations and it will be great for either!

If you’d like, you can always let your whip cool down a bit in the fridge before serving. But, as long as your ice cream is cold, the ice cream will probably cool down the whip anyway. 

Can I substitute ingredients in this Dalgona ice cream recipe?

Some, but not others. You can’t substitute the instant coffee for any other variety of coffee. It has to do with the drying process of instant coffee; if you swap it for brewed coffee it just doesn’t whip. And forget about coffee grounds… You’ll just end up with a wet mess. 

You can use your favourite instant coffee brand for Dalgona ice cream, though. You can also swap the sugar with a sugar substitute as long as it has granules that are textured similar to sugar. If you’re diabetic or on a keto diet you absolutely can combine this with sugar free ice cream for a diet friendly dessert, too! 

Of course, the ice cream you choose for your Dalgona ice cream recipe also matters. We used vanilla, but feel free to experiment with different varieties. 

Tips for making Dalgona coffee whip:

  • Use good quality instant coffee that you love. You’ll be able to taste it, so it’s important that your instant coffee is fresh and delicious.
  • Make sure your water is hot when you start whipping for best results.
  • If you need a bit of extra sweetness you can add more sugar, but it’s better if you add it to your drink base instead.
  • Taste your Dalgona whip on top of your drink or in this case ice cream, rather just alone, before making a final decision on it. It comes out strong and some people need it a little diluted to enjoy the taste.
  • Whipped Tik-Tok coffee (Dalgona coffee) is pretty stable thanks to the instant coffee, so it can be stored for later use and leftovers can be saved. 
  • Don’t add too much water or you won’t be able to get the foam to whip up! 


How to make the Dalgona ice cream recipe

First, you’re going to whip up the instant coffee, sugar, and water together. You can do this with a hand whisk but it takes a long time, so if there’s an electric hand mixer or stand mixer in your kitchen opt for one of those. Whisk ingredients until they’re whipped up and peaks form. Feel free to film this part for your Tik-Tok. 

Separately, put a scoop (or a few scoops) of your favourite vanilla ice cream in a bowl. You could also use French Vanilla or, really, any flavour that you prefer. 

Top your ice cream with three heaping spoonfuls of your whipped Dalgona coffee mixture and serve immediately. Use more or less depending on your preference. Feel free to add extra toppings too, like caramel or sprinkles, if you’re feeling adventurous. 


Storing Dalgona coffee

If you have any leftover Dalgona whipped mixture you can always store it in the fridge for up to 2 days. Just place the leftovers in an airtight container. This is also a handy way to make larger batches to use later.
