I’m finally out of flour. How did that happen? Well, the story all started…wait a sec.
How are you? Are you having a good week? Yeah? Good deal.
Okay, back to what I was saying. What was I saying…
Yes. Flour. I’m out. I’m NEVER out of flour. At least, not often…in fact, I cannot remember the last time I ran out of flour….probably months ago, which explains my lack of memory (or it could be that this naturally blonde girl has mama brain, which is far more likely).
How Does A Girl Run Out Of Flour?
Moving on. So, this whole flour shortage started when I got a 5 pound bag of carrots at the coop. A 5 pound bag of carrots. Now, I like carrots as much as the next person…but really?! I absolutely hate to waste good organic food, so I got creative.
And I made…carrot-applesauce. Carrot chips, carrot cake oatmeal, green salad, roasted root vegetables (carrots, parsnips, and beets), and…carrot cake muffins. O.M.G. They are so good.
Did you catch that? I’ll repeat myself just in case. THEY.ARE.SO.GOOD.
Smalls loves them, Ish loves them, I love them…it’s good all around.
AND, they have a vegetable in them, which is good, since Smalls has been a bit picky about what he’s willing to eat lately. I know it’s a phase, and I keep trying, but WOW is it frustrating.
Any tips or recipes that have helped you get your toddler off their picky streaks?
Carrot Cake Muffin Recipe
Recipe adapted from fANNEtastic Food.
- 1 1/2 cups Granny Smith applesauce (you could use unsweetened, if you like)
- 2 carrots, grated or shredded
- 1 1/2 cups white whole wheat flour
- 1/3 cup gluten free rolled oats
- 1/2 cup brown sugar
- 1/3 cup raisins
- 1/3 cup chopped pecans
- 2 tsp cinnamon
- 1 tsp all spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
Preheat your oven to 350 degrees and grease your mini muffin tin. Put the carrots and apple sauce into a mixing bowl and incorporate. Add the dry ingredients, in the order listed, to the bowl. Stir until just combined.
Spoon the mixture into your muffin tin. Bake for 15 minutes, removed from the oven, and cool for 10 minutes. Remove from the muffin tin and allow to cool the rest of the way.
Then, enjoy! I dare you to try and make these last (though they do freeze well)! 🙂

The carrot cake muffin sounds delicious. Some muffins tend to get dry, but I love that you used applesauce. It helps add moisture to the cake.
It definitely does! We love using applesauce when we bake.
I like that you made them into muffins instead of a cake. They are more portable that way and it’s easier to portion control, too.

It’s such a draining feeling when you run out of an ingredient that you need, or think you have something in the cupboard when you really don’t. I don’t think I’ve ever made a baked good with carrot in it before.
