In case you haven’t noticed, it’s fall. I love fall. Pumpkin and apples…and when you put them together. Holy.Cow. Or rather, holy muffins, in this case!
So, I had planned to make some super-yummy “carmel” apple spice muffins…using applesauce. Color me embarrassed when I realized that my kids had eaten the last of the applesauce, and it wasn’t on my grocery list (along with a spaghetti squash).
And since I’d promised muffins, I had to think on my feet. I wasn’t in the mood to make a run back to HEB since it was mid-afternoon {read: super busy} and The Baby was down for a nap. So I got creative…okay, fine. I had canned pumpkin-it was going to have to work.
Canned pumpkin (in theory) should work out the same as applesauce…right?
But you know what? It’s better. Like way better. And, these muffins are not only delicious, they’re also gluten free! Who said healthy food couldn’t be delicious?
Pumpkin Apple Spice Mini Muffins
Ingredients
- 2/3 cup organic canned pumpkin
- 2 eggs
- 1 cup unsweetened cashew milk
- 1 tablespoon cinnamon
- 5 tablespoons coconut sugar
- dash nutmeg
- 1 teaspoon vanilla
- 1 box Motivator Muffin Mix
- 1 pink lady apple washed, cored, and finely chopped
- 1 teaspoon cinnamon
- 2 tablespoons coconut sugar
Instructions
- Preheat your oven to 350 degrees, and grease a mini muffin tin with lard or shortening.
- Combine the first 7 ingredients and mix using a hand mixer on low speed (I love this one). Slowly add in your muffin mix and blend on low speed until just combined.
- Gently fold in your apples (I used this chopper to cut them super small and uniform).
- Using a large cookie scoop, scoop your batter into your mini muffin tin. Mix together the cinnamon and coconut sugar and sprinkle lightly over each muffin.
- Bake for 20 minutes, or until a toothpick comes out clean. Allow to cool for 5 minutes, then move to a wire rack.
I am absolutely in LOVE with the mixes from FitBody Bakery. Y’all. They are freaking awesome. And you really cannot mess them up!
I added a TON of stuff to the basic mix in this recipe, and they were super light, fluffy, and so, so delicious. Plus, they freeze well!
If you have kids, or you just don’t do gluten, you need to get yourself a box because the boys DEVOURED these.

Oh my word they were so good! I’m making them again this weekend, but I’m going to do a crumble topping. I may be a wee bit excited about that! LOL
