Do you ever have one of those nights where you just want a huge slice of rich, decadent chocolate cake? With cream cheese frosting? No? Just me? Okay then. Skip to my healthy chocolate mug cake recipe.
Healthy Chocolate Mug Cake
Well, I’ve been craving chocolate cake like you wouldn’t believe, but since I started following trim healthy mama, I have been losing weight, and I feel awesome. Y’all. I wasn’t a huge fan of the “artificial” sweeteners, and to be completely honest, I’m still not sure how I feel about them.
I am trying to give them a fair shot in the name of the blog, though. My plan is to adhere to Trim Healthy Mama’s recommendations for 30 days and then figure out if I need to modify things for myself.
I miss honey. So that probably won’t be out for long. But this cake kind of rocks. Okay, okay, it’s awesome. Like lick the bowl awesome. So I had to share.
Healthy Chocolate Mug Cake (THM S)
- 3 tablespoons TrimHealthyMama copycat baking blend
- 3 1/2 teaspoons erythritol
- 1 heaping tablespoon cacao powder
- 1/4 cup egg whites
- 2 tablespoons plain 0% Greek yogurt
- 2 tablespoons unsweetened vanilla cashew milk
- 1/2 teaspoon baking powder (aluminum free)
- pinch salt
Whisk together all of your ingredients for the cake in a small mixing bowl until well combined and free of lumps. Pour into a large mug or ramekin.
Microwave for 2-3 minutes until the center is cooked through (insert a toothpick to check). Be careful when you remove it, as the mug will be hot.
Not a Chocolate Fan?
This recipe is a great base recipe for just about any flavor you want. If you aren’t a huge fan of chocolate, skip it! Or add to it.
Peanut Butter Cake
Leave out the chocolate and substitute 2 tablespoons of de-fatted peanut flour for 2 tablespoons of the THM baking blend for a peanut butter cake.
Peppermint Chocolate Cake
Add 1-2 drops of Peppermint essential oil for a mint chocolate cake.
Lemon Cake
Skip the chocolate altogether and add 1 tsp pure vanilla extract and a drop of lemon essential oil for a delicious lemon cake.
Apple Spice Cake
Substitute no-sugar added applesauce for the chocolate and greek yogurt and add 1/2 teaspoon each of cinnamon and clove for apple spice cake.
And I’m sure that’s not a complete list! These are just the things that I’ve tried so far.
Top Your Cake
I’m not a fan of plain cake and my favorite cream cheese frosting is not exactly healthy. I love topping my cake with this healthy version instead.
Cream Cheese Glaze
- 2 teaspoons cream cheese
- 1 teaspoon softened Ghee
- 1 teaspoon erythritol
- dash vanilla
While your cake bakes in the microwave, make your glaze. Gently whisk everything together until well combined.
Allow the cake to cool slightly, then drizzle your glaze over your cake and dig in! This glaze is delicious no matter what flavor cake you make.
You can also top your cake with fresh berries, a dollop of yogurt, or nothing at all.
This cake is not something that you can eat every day, but it’s definitely not off limits. That’s the beauty of a lifestyle (or so the TrimHelathyMama book says)-you get to figure out what sounds good and go for it.
