Life is BUSY, y’all. Smalls gets on the bus at 7:46 a.m. (yes, that’s very specific. I find it slightly comical.), then I come in, get The Baby square with a healthy-ish breakfast and get a workout in. Once I’ve showered and gotten dressed, I get to work. I still need to finish my coffee, think about what The Baby will have for lunch…and… CRAP! I forgot dinner! Good thing for healthy instant pot recipes.

Please tell me that I’m not alone. It’s getting harder and harder to keep everything straight. Swimming lessons, homework, my business, laundry, household chores… Most days I feel like I’m drowning. And I have to feed everyone!

I feel like my time is completely maxed out.

Which stinks, because that makes it so much easier to justify eating junk. I mean, it’s super fast and easy to order a pizza or have Ish pick up Culvers (yay for gluten free buns!!) on the way home…but that won’t help me get the rest of this weight off.

And it’s definitely not doing my joints any favors. I find the farther I stray from paleo, the more I feel like garbage.

That’s not surprising, and it’s an easy if time-consuming fix.

Add the fact that I want my boys to eat healthy, well-balanced meals (and not just mac in a box), and I have to find a way to get dinner on the table without it taking more time out of my day.

It’s really important to us to still eat as a family and for it to be healthy but when you have no time to cook, how do you get it all done?

My Favorite Healthy Instant Pot Recipes

My instant pot has literally been my savior for I don’t even know how long, and when I realized that we really, really need to go full on paleo, I was a little scared.

There have been some gross meals, I’m not going to lie, but these recipes are ones that I keep coming back to time and time again.

They are quick and easy, not to mention delicious.
