Summer is in full swing here. We just got back from our awesome trip to the UP, which was a huge success.
When we discussed taking a trip this summer, I told Ish that I had one request: I wanted to stay in Michigan.
Why?
Because he’s always coming home from a work trip talking about the amazing towns he’s visited or the gorgeous beaches, or the beautiful drives, or the fudge (Mackinac is known for its amazing fudge).
But because his trips are during the week (and usually during the school year) we rarely get to go with him. So (being me) I made a Michigan bucket list that included Pictured Rocks, Sleeping Bear Dunes, Lake Michigan, Lake Huron, and Lake Superior, and Mackinac Island.
And we hit them all, y’all! It was so much fun. We drove up into the UP (or Upper Peninsula for those of you who are not Michiganders) and spent 4 days enjoying the sights and visiting places that were absolutely stunning.
We have been grilling a LOT lately, but I got tired of rotating the same meals, so I started playing around with different marinades and sauces, and discovered my new favorite thing: homemade white bbq sauce.
Y’all. This stuff is amaze-balls. It’s got just the right amount of zing and spice but it’s creamy at the same time. It’s magic on chicken, pork, and Smalls even asks to dip his polish sausage in it.
This Homemade White BBQ Sauce Recipe Is Everything!
Seriously so incredibly delicious.
But. My favorite way to eat it is over some grilled chicken thighs.
So I’m going to share both recipes with you because you should definitely start here and expand your uses for this seriously amazing sauce.
It’s so, so good.
Homemade White BBQ Sauce
- 2 cups organic mayonnaise (the real stuff, not miracle whip – sorry dad!)
- 1 cup organic apple cider vinegar
- 1 1/2 tablespoons gluten-free Worcestershire sauce
- 1 clove garlic, pressed or minced
- 1 tablespoon sea salt
- 1 tablespoon pepper
- 1/2 teaspoon cayenne pepper (you can add more if you like heat or don’t have whiny kids)
This white bbq sauce is literally super easy to make. Grab a medium mixing bowl, and add the first two ingredients.
Stir or whisk until smooth and then add the remaining ingredients.
Allow the flavors to marry in the fridge for at least 30 minutes (just enough time to grill your chicken thighs! Huzzah!).
While you are waiting on your sauce, you’ll want to get your chicken ready.
Grilled Chicken Thighs
- 8 skin on, bone-in chicken thighs
- 2 teaspoons sea salt
- 2 teaspoon pepper
- 1 teaspoon garlic salt
Heat your grill to approximately 35o-400 degrees.
Season your chicken thighs with garlic salt, salt, and pepper.
Cook your thighs until they are almost done, and then baste them with the white bbq sauce.
Cook an additional 1 to 2 minutes per side and remove from the grill.
Serve with extra sauce on the side and a big green salad.
