Last night I got a bit creative with my breakfast. Rather than my usual morning protein shake, I made overnight oats. While they’re a bit higher in calories than my shakes, they are a nice treat every now and again. As I was making them, I realized that I was totally out of chocolate almond milk, so I improvised! Skip to the pumpkin pie overnight oats recipe.
Pumpkin Pie Overnight Oats
And guess what? It was awesome. You have to try this recipe especially if you love pumpkin pie.
Pumpkin Pie Overnight Oats
- 1 tsp chia seeds
- 1/2 mashed RIPE banana (brown spots are your friend!)
- 1 tsp local honey (raw is best)
- 1 tbsp pumpkinĀ puree
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla
- 1/3 cup unsweetened coconut or almond milk
- 1/3 cup rolled oats
Mix all of the ingredients (except the oats and milk) in a glass mason jar or tupperware.
Next, add the oats and milk and then mix thoroughly. Cover and refrigerate overnight.
To serve, just grab and eat! This recipe is so simple for busy mornings!
If you’d like to warm it a little, just take it out of the fridge about 30 minutes before breakfast. YUM!
