School has officially started!!
Y’all. We survived the first week of school.
And I’m the only one who cried.
For an hour.
In my closet.
With this smoothie (because I gave up ice cream…again).
And y’all. This smoothie is the bomb.
It’s so good-perfectly sweet, and creamy, and it makes me think of ice cream…but it’s good for me. And (bonus!) this smoothie makes amazingly creamy smoothie popsicles, too!
And since the weather has been all over the place (anywhere from 65 to 95!), leftover smoothie popsicles are a necessary (and unexpected) after school snack this time of year.
Vegan Strawberry Mango Smoothie
Ingredients For Strawberry Mango Smoothie
- 1 cup frozen mango
- ½ cup frozen strawberries or 4-5 super large frozen ones
- 2 tablespoons of chia seeds
- 1 tablespoons collagen
- ½ cup coconut milk
- ¼ cup + 1 tablespoon water
Directions For Strawberry Mango Smoothie
Add your mango, strawberries, chia seeds, collagen, coconut milk, and water to your high powered blender (I love my Vitamix).
Blend until smooth, using your tamper as necessary.
This smoothie is super thick, so if you prefer a thinner consistency, increase the amount of water that you add gradually.

This recipe makes two adult-sized servings or 4 kid-sized servings. Or about 6 popsicles (at least according to my popsicle mold).
If you don’t desire popsicles, or can’t drink the whole smoothie, you can halve the recipe…or you can freeze the leftovers in an ice cube tray to use as ice cubes in orange juice, to blend into another smoothie, or for a small treat later on.
Just make sure that once the smoothie cubes freeze, you remove them to a freezer bag or container so that they don’t end up getting frosty.
