Teriyaki Pork Stir Fry with Quinoa

I always tell myself that I’m going to food prep on the weekend. But you know what? Lately, I forget, or we’re volunteering or out somewhere, or I simply run out of time…which means that we end up eating chicken nuggets more often than I’d like to admit. Sadly, when I forget lunch I really forget…usually, until I look at the clock and realize that it’s 30 minutes to dinnertime and the kids haven’t eaten yet. I whipped up this Teriyaki pork stir fry with quinoa the other day, and let me say it won a blue ribbon for dinner! 

And you know what? Nuggets take forever to cook! Nobody has time for that.

Because let’s face it. Life is busy. There are projects and chores, art projects and play dates, and not nearly enough hours in the day.

Plus, when I feed my kids most of the “lunch” options you find at the store they’re hungry less than 30 minutes later.

I’ve been looking for solutions that aren’t crackers and meat (because honestly who wants to eat those things every single day), and I came across . And guess what? It takes a minute to cook, is wholesome, and quinoa is a complete protein.

That’s definitely a winner in my book. I quickly did an inventory of what I had on hand, and turns out I had some pretty awesome leftovers and freeze dried ingredients. I tossed them all together to make a delicious stir fry (or fried quinoa) that we’ve been eating all week.

5 Minute* Teriyaki Pork Stir Fry with Quinoa

  • 1 tablespoon coconut oil
  • 2 cups
  • 1 cup chopped leftover pork roast
  • 1/2 cup fresh or freeze-dried chopped carrots
  • 1/2 cup fresh or freeze-dried sliced celery
  • 1/4 cup teriyaki sauce
  • 1/2 cup fresh or freeze-dried thinly sliced onions
  • 1/2 cup frozen green peas
  • 2 eggs

Microwave your quinoa for 1 minute to cook. Heat a cast iron or heavy-bottomed pan over medium-high heat. Add the coconut oil and chopped roast. Sauté until the quinoa is finished cooking, then add in your vegetables*.

Cook until vegetables are heated through. Add the teriyaki sauce and quinoa. Stir until the ingredients are totally mixed together.

Make a hole in the center of your stir fry and crack 2 eggs. scramble them and mix them into the pan.

That’s it! Hot and ready lunch in 5 minutes and everyone loved it.

So much so that we ended up having it again for dinner (and I may have had it for breakfast this morning, too).
