- Cream of Chicken Soup
- Rice

Instructions
- Add two cups of the white rice to a casserole dish.
- Sprinkle in the garlic and add salt and pepper.
- Add in the one cup of water.
- Pour in the cream of chicken soup and stir with a wooden spoon or a fork.
- Add some olive oil to a non-stick skillet and heat using medium-high heat. Place the chicken breast in the pan and brown the outside.
- Put the chicken into the casserole dish—Bake at 250 degrees for 2 hours.

- You can use white or brown rice when making this casserole. Stay away from minute rice, or it will end up mushy if you cook it that long.
- Browning the chicken breast helps lock in the juiciness of the chicken. Plus, it gives it some extra flavor too. The chicken doesn’t need to be cooked all the way through when you are browning it. Simply brown each side, and then it will finish cooking in the oven.
- The key is cooking it low and slow in the oven. This allows all the juices and seasonings to blend together well.
Can I Add Cheese?
Yep! Feel free to add 1/2 cup of your favorite cheese to the casserole before baking. Then sprinkle some more on during the last 30 minutes. We love to use cheddar, but you could also use mozzarella, Pepper Jack, or Colby Jack too.
How Do You Store Leftovers?
Let the chicken and rice casserole cool down, then place it in an airtight container. The chicken rice casserole will last in the fridge for 3-4 days.
Additionally, you can freeze leftovers for up to 3 months. You’ll need to defrost in the fridge overnight before reheating.
To reheat leftovers, place them on a microwave-safe dish and cover with a paper towel. Heat up for 1-2 minutes or until it’s steaming hot. You can also put in the oven in a casserole pan. Heat at 350 degrees for 10-15 minutes or until it’s hot.
