lace your pork loin in a bowl or large container. Grab your seasonings and season with 2 tsp salt, 2 tsp pepper, and garlic powder. Rub the mixture onto all sides! You want it to be covered with flavor.
Cover the pork loin and place in your refrigerator for 20-40 minutes (or longer if you wish). Basically, you're giving it time for the flavors to all work and mesh together.
Preheat oven to 425℉.
Slice apples (remember your choice here) and onions and chop garlic.
Take the pork loin out of the refrigerator and add onions, apples, and garlic and combine with the pork loin.
To that, add honey and oil. Next, add the remaining 1 tsp salt,1 tsp pepper, and cinnamon.
Place a layer of apples and onions at the bottom of a 9x13 baking dish. (If you have little helpers in the kitchen, this can be a great step for them to take control of and rock!)
Put pork loin directly on top of the apples and onions.
Once done, add the remaining apples and onions around it. (Stick 'em in there, the more the merrier!)
Add about 1 tbsp soften butter to the top of pork loin and break up remaining butter into pieces and put on top of apples. (aahhhh.....butter)
Bake for 30 minutes in your oven.
Once 30 minutes have passed, reduce your oven temperature to 350℉ and continue to bake for 30 minutes.
Take out of the oven (don't forget your oven gloves!) and stir/toss apple and onion.
Once the apples and onion are mixed up, turn heat up to 450℉ in your oven and bake for 10 more minutes.
