Ingredients needed to make Chicken Satay
- Chicken breasts (1 pound)
- Chicken satay boxed seasoning mix (plus any ingredients listed on the box)
- Wooden skewers
Ingredients needed to make Cucumber Salad
- 2 cucumbers
- 1 small red onion
- cilantro
- 1 tablespoon sugar
- 1/3 cup white wine vinegar
- 1 teaspoon chili pepper flakes
- pepper to taste
Ingredients needed to make a Peanut dipping sauce
- 2 tablespoons peanut butter
- chili pepper flakes
- small (tiny!) amount of chili oil
How to make Chicken Satay
Start by cutting your chicken breasts into strips that are thick enough to be on wooden skewers. Once they are cut, set aside.
Mix together the chicken satay package ingredients in a large bowl.
Take your cut up pieces of chicken and add them onto the skewers. Once added, dip and cover them with the mixed up satay mixture.
Once they are covered, place them on a hot griddle or pan and cook until they are completely done.
Always ensure that the chicken is cooked all the way through before removing from the pan.
How to make Cucumber Salad
Begin by washing off the cucumbers. Then remove the outer skin and dice up the insides into small, square bite-sized pieces. Set aside.
Dice up your red onion and cilantro. Add in your cut up cucumber bites. Mix together in a bowl.
Next, add in your white wine vinegar, chili pepper flakes, sugar, and pepper. Stir.
How to make a Peanut Dipping Sauce
Take your 2 tablespoons of peanut butter (chunky or smooth) and mix in a very small amount of chili oil and pepper flakes. THIS IS GOING TO BE HOT. If you don't want it to be hot, omit and add a small amount of coconut oil instead. (You're just needed to add a liquid base that is going to make the peanut dipping sauce just a little less thick than it already is.)
