- 1 ½ cups gluten-free baking flour
- 3 tablespoons sugar
- ¾ teaspoon salt
- ½ teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 egg
- ½ cup pumpkin puree
- 1 1/3 cups milk
- 3 tablespoon oil
1.Combine gluten-free baking flour, sugar, salt, cinnamon, pumpkin pie spice, and baking powder in a large bowl.
In a separate bowl, mix egg, pumpkin puree, milk, and oil.
Make a well in the center of the dry ingredients and pour the wet ingredients in. Stir until just combined.
Pour ¼ cup of batter onto a greased skillet or griddle and cook over medium-high heat. Flip the pancake when bubbles start to form.
