Ingredients
  

  • 1 ½ cups gluten-free baking flour
  • 3 tablespoons sugar
  • ¾ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 egg
  • ½ cup pumpkin puree
  • 1 1/3 cups milk
  • 3 tablespoon oil

Instructions
 

  • 1.Combine gluten-free baking flour, sugar, salt, cinnamon, pumpkin pie spice, and baking powder in a large bowl.
  • In a separate bowl, mix egg, pumpkin puree, milk, and oil.
  • Make a well in the center of the dry ingredients and pour the wet ingredients in. Stir until just combined.
  • Pour ¼ cup of batter onto a greased skillet or griddle and cook over medium-high heat. Flip the pancake when bubbles start to form.
