Bruschetta Chicken

Ingredients
  

  • 11/2 lbs of skinless boneless Chicken breasts
  • 2 garlic cloves minced
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 14.5 oz can of diced tomatoes
  • 1 tsp  Worcestershire Sauce
  • 1/3 Cup  Sherry
  • 1/2 tsp  Salt
  • 1/2 tsp  Pepper
  • 2 tsp  Italian Seasoning
  • Hot Cauliflower Rice or regular

Instructions
 

  • Combine the diced tomatoes, sherry, Worcestershire Sauce, balsamic vinegar, Italian Seasoning, salt and pepper into a bowl.
  • Select Saute and add the olive oil to the pot. Brown chicken in batches on both sides.
  • Remove chicken from pot and then add garlic to the pot. Cook, stirring until soft, about 2-3 minutes.
  • Return the chicken to the pot
  • Pour the Vinegar mixture over the chicken.
  • Cook at High Pressure for 8 minutes. When cooking is complete, use a natural release to depressurize.
