Begin by cooking up the chorizo meat in a skillet or the stove. You'll want to chop it up finely and make certain that it's cooked all the way through. Once cooked, drain if there is any excess grease and set aside.
Mix together the cornbread mix as stated by the directions on the package. (You're using this to make your pancakes so if it's too thick, add in a tad bit more water to help it be a bit thinner.)
Once you have the cornbread mixed, add to your griddle or hot pan in small pancake sized circles. Before you flip over to the other side, sprinkle on some of your cooked chorizo. Then flip.
Cook your pancakes until they are done then pull them off the hot stove. Before you start stacking them, add in some of your fun ingredients and toppings between the layers. Spread out sour cream, add in some diced tomatoes or sprinkle with cheese. Make certain that you stack them as you go to create a giant cornbread pancake!
If you want to add an egg to the stop, do so! You can cook your egg either hard or soft, whatever you're feeling like eating.
Once the egg is done, place it on top of the pancake.
Top with chives and cilantro and enjoy!
