The weather is getting a little cooler and on Sundays, you’ll find me in my chair watching football. I’m not a lover of cooking, but I do love to use my crockpot. I also like to eat healthy so I’ve chose 5 healthy crockpot meals that I think you will love.
Healthy Crockpot Meals You Will Love
These are great for when you’re busy and trying to eat healthy. Pop everything in the slow cooker and away you go!
Turkey Sloppy Joes from Skinny Ms.
Who does not love a good sloppy joe??? Be sure to choose at least 93% fat free turkey or higher to make it healthier.
Spaghetti Squash
I cook my spaghetti squash in the crockpot. Wash the outside of the squash, then pierce the outside of the skin with a sharp knife five or six times.
Place it in the crockpot with 1 1/2 cups of water (increase to 2 cups if you’re cooking two squashes side by side), and cook on high for 3 to 4 hours or on low for 6 to 7 hours.
You can fit 2 smaller squash in the crockpot. It may seem like a long time, but if you don’t need the squash right away, it’s a simple way to cook it.

I LOVE Mexican food and if I can make it in the crockpot, even better. I usually buy reduced fat/2% cheese. I don’t notice a huge difference in the taste and it melts well. I never buy fat free cheese because I’ve heard it just doesn’t melt.
Chicken Fajitas from Cooking Classy
More Mexican!!! I love fajitas because you can put whatever you like into them. I choose the low carb tortillas when I make fajitas…again, I don’t notice a huge taste difference and they are much better for you than white flour tortillas. Corn tortillas are also better for you than white flour tortillas.
Savory Bean and Spinach Soup
To me, fall is soup time. I LOVE spinach, so this soup really appealed to me. The beans give you your serving of protein. If you are vegetarian or vegan, this soup is also great for you.
