What do you usually eat for breakfast? Around here during the week, we usually choose from a few of the same things…
Hard-boiled eggs, cereal with flax milk, paleo pancakes (we love this mix!) or waffles (just freeze them and then reheat them to make them quick and easy), or oatmeal.
About once a week, we also have a “breakfast for dinner” day where I’ll make egg and bacon sandwiches, a frittata, or omelets. Honestly, I wish I could make these things every day for breakfast, but both my kids are slow eaters, and getting up at 5:00 a.m. with me doesn’t seem like the sanest idea I’ve ever heard.
When we get to sleep in (until 7:30 a.m.!) on the weekends, we like to get a little crazy.
I’ll cook up a big breakfast on Saturday morning while the kiddos play with legos and watch cartoons so that they’ve got plenty of energy to do their chores (Yes, my kids have chores. Yours should, too.), and then go on a family bike ride or hike.
Fueling with protein in the morning means that we all have more energy, and there’s far less risk of a carb-induced meltdown in the afternoon. Healthy omelette recipes are always a go-to in our home. They fuel our bodies for the day ahead.
