Incredible PB & J Protein Balls

You guys! I am so excited to share with you my latest creation of Pb & J Protein Balls! They are simple, gorgeous and finger-licking delicious. You can whip up a batch in a matter of minutes and they will pretty much disappear almost as quickly.

It wasn’t very long ago that I would make my droolworthy keto cherry almond butter fat bombs all the time. Why? Because they remind of the peanut butter and jelly I grew up with. We still eat them all the time, but these PB & Jelly Protein Balls are the BOMB too! Besides can you really have too many recipes that are similar to peanut butter and jelly sandwiches? I think NOT! Okay, enough chat about that, let’s dig into these incredible protein balls.

What You Need To Make PB & Jelly Protein Balls

You can seriously make these protein balls with just 7 ingredients. You guys…these are even VEGAN too! Plus, they are sweetened with pure maple syrup so you don’t have to worry about refined sugar.

How To Make Peanut Butter & Jelly Protein Balls

There is nothing I enjoy more than a simple and easy recipe that takes little to no time to make. It’s just a great and rewarding feeling to know that I created something that is amazing and I didn’t even have to put too much effort into it.

First Step: Mix the minute oats and vegan protein powder together in a large bowl.

Second Step: Heat up the coconut oil and peanut butter in a small bowl. Only warm it until it has just melted. You do not want to overheat it.

Third Step: Use a whisk and combine the oats and peanut butter mixture together. Mix in 1/8 cup and 1 tablespoon of the raspberry jam.

Fourth Step: Drizzle in the unsweetened almond milk and give it a stir.

Fifth Step: Allow the mixture to sit for a minute or two. This gives the protein powder time to be absorbed a bit.

Sixth Step: Use your hands and roll the protein balls into 10 evenly shaped balls. Set them on a piece of parchment paper.

Seventh Step: Take the remaining raspberry jam and whisk it with the pure maple syrup into a small bowl. Then put the mixture into a piping bag. Drizzle the mixture on top of the protein balls.

Note: If you don’t have a piping bag, you can use a ziplock bag with a hole in the corner too.

Eighth Step: Put the parchment-lined baking sheet in the freezer with the protein balls for 30 minutes. This will allow them time to set up.

Ninth Step: Put the protein balls into a container or freezer bag and grab out what you want when needed. It’s best to let them sit on the counter for 5 or 10 minutes before serving. Enjoy!

Ingredients

  • 1 cup minute oats
  • 1 scoop protein powder (vegan)
  • ¼ cup creamy or chunky peanut butter
  • 1 tablespoon coconut oil
  • 1 tablespoon unsweetened almond milk
  • 1/4 cup + 1 tbsp raspberry jam (divided into 1/8 cup and 1/8 cup + 1 tablespoon)
  • 1 teaspoon pure maple syrup
