So. Happy THURSDAY! I love Thursdays. Maybe it’s because they‘re a gateway to Friday? Your guess is as good as mine on this one. So. Pizza.
This pizza is ah-mazing, you guys. Seriously. It completely blew my mind. Ish helped himself to a few slices, too.
I think that the combination of toppings, crust, and cheez were fantastical.
That cheez!
OHMYGOD. SO. GOOD. Almost good enough that Smalls banging the pots together isn’t bother me…much. Hey, I said ‘almost’.
So. I have a love for tomato sauce, but not so much tomatoes. They’re really not my favorite food. At all. In fact, I only like them in sauce, tabouli, and sandwiches. So I’m picky. There are plenty of other fruits and veggies out there for me to love.
BUT. I did love, love, love them in my pizza sauce. It was absolutely RAWsome.
Raw Vegan Pizza Sauce
- 2 cartons cherry tomatoes
- 1/2 bunch cilantro
- 1/4 cup spinach
- 2 tbsp Italian seasoning
- 1 tsp rosemary
- 2 stalks celery
- 1/3 cup sun-dried tomatoes, reconstituted
Stick everything in the blender and blend until smooth. Easy-peasy.
