Chocolate Banana Chia Pudding Recipe
I think they may need their heads examined…but they’ve been asking for it, so I was determined to create something that was delicious and healthy…and used up all of the bananas in the house.
Chocolate Banana Chia Pudding
- 2 bananas
- 2 cups almond milk
- 6 tablespoons raw cacao powder
- 6 tablespoons maple syrup, separate 4 and 2
- 2 teaspoons vanilla extract
- 1/2 cup + 4 tablespoons chia seeds
In your Vitamix, combine 1 banana, the cacao, vanilla, and 4 tablespoons syrup.
Pulse, then pour in the almond milk through the lid.
Blend until smooth.
Pour the mixture into a bowl and whisk in the chia seeds.
Cover and refrigerate for four to six hours. You want the seeds to absorb the mixture and thicken to make your chia pudding.
Slice the second banana.
Remove your pudding from the fridge and stir in the last 2 tablespoons of syrup.
Top with banana slices, coconut flakes, more chia seeds, or even strawberries.
This stores very well in mason jars for a few days, though I bet it won’t last that long!
