Kale tends to get a bad rap…poor guys.

Not only is kale versatile in how it can be cooked (soup!), but it also takes on other flavors really, really easily.

Before the write off kale, you need to make this kale chips recipe.

I’ve made them for myself (lots of times), my kiddos and my hubs and every time…they’re a hit. Yes, you read that right. My boys all like kale!

baked kale chipsPreheat the oven to 275 degrees.

Thoroughly rinse and dry the kale leaves. Make certain that you really get the water off. You don’t want soggy kale chips!

Remove the middle rib from each kale leaf, and then cut it into slightly larger than bite-sized pieces. (The rib pieces are hard and chewy – nobody has time for that.)

Keep in mind that the kale leaves will shrink up with they are cooked so when you cut them bigger, they’ll still be bite-sized for the most part.

Once you have them cut up, place the cut kale leaves into a large mixing bowl.

Add in 1-2 tablespoons of the Ranch seasoning mix, and toss again to combine well. (Smells so good!)

Lay the kale pieces out in a single layer on a parchment-lined baking sheet. You don’t want them to overlap or they won’t become crispy.

Bake for 10 minutes and take out of the oven. Turn the kale leaves over, and then bake for an additional 10 minutes. You are wanting to get both sides crispy!
