My wonderful friend Kara told me about eating sautéed avocados with breakfast about two months ago. And I thought she was nuts.
And then I had half an avocado sitting on the counter, and I was making eggs…so I decided to try it.
Y’all. She was right! I am totally enamored with cooked avocados. It’s a super-tasty melty bite of goodness….

Okay, so now that we’ve established the fact that cooking avocado is the most amazing thing on the planet, you need to know that this is not the only way!
Stuffed Avocados
While, I love good Texas BBQ…I also have a slight obsession with Carolina Gold BBQ Sauce. And down here, you don’t just get your sauce on your meat. Some places don’t even have sauce! I guess because I’m a transplant, it’s just a flaw I have to live with.
Ingredients
- 4 large, ripe haas avocados
- 1 whole roasted chicken (you can use one from the store, or roast it yourself)
- 1 cup Carolina Gold BBQ sauce
- 1/2 cup sharp cheddar cheese
Instructions
- Preheat your oven to 425.
- Debone and shred your chicken, then mix in the BBQ sauce.
- Halve your avocados and remove the pits, placing them on a rimmed baking sheet, flesh up. "Stuff" your avocados with approximately 3/4 cup of chicken and top with a sprinkle of cheese*.
- Bake your avocados for 8-10 minutes until the cheese is melted. Allow to cool for 5 minutes and serve.
- *To make this recipe strict paleo, omit the cheese.
